This saffron gnocchi is a perfect choice for such outdoor moments – quick, flavorful, and ideal for cooking on a griddle!
What you’ll need
✨ Ingredients:
Gnocchi: 300 g
Saffron: 0,5g (1 sachet)
Alder-smoked bacon: 100 g
Butter: 50 g
Kale: 100g (stems removed, roughly chopped)
Red chili: 1 small, finely chopped
Yellow onion: 1 small, finely chopped
Garlic: 1 clove, finely chopped
Lemon: 1 (zest and juice from half a lemon)
Parmesan: 40 g (grated)
Oil: 1 tbsp (for frying)
Salt and black pepper: to taste
Step-by-Step
✨Instructions:
1. Fry the bacon until golden and set it aside.
2. Cook the gnocchi in the bacon fat with a little oil over medium heat. Let the gnocchi develop a nice golden crust.
3. Once the gnocchi is almost done, add the remaining ingredients along with a generous amount of butter (we used about 50 g for two servings).
4. Let the kale soften and the flavors meld together.
5. Squeeze fresh lemon juice over the dish just before serving and top it off with plenty of parmesan.
✨ Tip: Want to take it up a notch? Sprinkle some toasted almond flakes on top before serving!
