You have to try this amazing and quick quesadillas recipe. Enjoy them anywhere!
Ingredients:
4 medium-sized tortillas
150 g wind-smoked ham, sliced
150 g Västerbottensost cheese, grated
1 small yellow onion, chopped
1 handful of kale, roughly chopped
½ tsp garlic powder
½ tsp paprika powder
Salt & black pepper to taste
Butter or oil for frying
For serving:
Pesto & Lemon Sauce (store-bought)
Instructions:
1. Prepare the filling:
Chop the onion and remove the stems from the kale before chopping. Heat a pan and fry the onion, kale, and sliced ham in a bit of butter or oil until softened and slightly golden. Season with garlic powder, paprika powder, salt, and black pepper to taste.
Set aside.
2. Assemble the quesadillas:
Heat a pan and melt a little butter or oil.Place one tortilla in the pan and sprinkle Västerbottensost over it.
Evenly distribute the ham, kale, and onion on top. Sprinkle a little more cheese and place another tortilla on top.
3. Cook the quesadillas:
Fry on medium heat until the cheese has melted and the tortilla is golden brown.
Carefully flip and fry the other side until golden as well.
Be mindful of the heat so the tortilla doesn't burn before the cheese melts.
4. Serving:
Place the finished quesadilla on a cutting board and slice it into wedges.
Drizzle with pesto and lemon sauce.
